Ingredients:
1 can pumpkin puree (15 ounces)
4 eggs
1 cup vegetable oil (or 1/2 cup oil + 1/2 cup applesauce)
2/3 cup water
2 cups white sugar
3 1/2 cups four
2 teaspoons baking soda
1 1/2 teaspoons salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/4 teaspoon ground ginger
Directions:
Preheat over to 350F. Grease and flour 2 loaf pans.
In a large bowl, mix together pumpkin puree, eggs, oil, water and sugar until well blended. In a separate bowl whisk together flour, baking soda, salt and spices. Stir the dry ingredients into the wet ingredients until blended. Pour evenly into pans.
Bake for 50 minutes or until a toothpick inserted into the middle comes out clean.

*Notes - The original recipe calls for 3 cups sugar, but my bread tastes delicious with just 2 cups. My loaves needed an addition 15 minutes baking time, but my oven is special so take that with a grain of salt.
